Preheat oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway, until tender and slightly caramelized.
Remove the sweet potatoes from the oven, drizzle with maple syrup, and toss to coat. Return to the oven for 5 more minutes to caramelize slightly. Remove and set aside.
While the sweet potatoes roast, whisk together all the lime sauce ingredients in a small bowl. Taste and adjust seasoning as needed. Refrigerate until ready to use.
Heat a dry skillet over medium heat. Warm each tortilla for about 30 seconds per side until pliable and slightly toasted. Keep wrapped in a clean kitchen towel to stay warm.
